Roast Asparagus Salad

Ingredients
500g Bundle Asparagus
250g Cherry Tomatoes
250g Streaky Bacon
250g Rocket Leave
500g New Potatoes
2 tbsp Honey
Preheat oven to 220 degrees C, Gas mark 7. Wash and prepare the asparagus by snapping off any woody ends. Wash tomatoes, rocket and potatoes. Boil the potatoes until still firm.
Place asparagus and tomatoes in a roasting dish. Stretch each bacon rasher by holding it firmly and running a knife down the rasher away from you. This not only stretches the bacon but also thins each rasher.
Cut the bacon rashers in half and roll each section up. Place on the roasting dish and drizzle with honey. Drizzle with olive oil and cook for 8 - 10 minutes.
