500g Bundle Asparagus
250g Streaky Bacon
Preheat the oven to 220 degrees C, Gas mark 7. Remove any rind from the bacon and stretch (thin) each rasher by holding it firmly and running a knife down the rasher away from you.
Cut each slice into three and wrap one section of bacon around an asparagus spear. Repeat until they are all wrapped.
Place on a roasting dish side by side and drizzle with olive oil. Roast for 8 - 10 minutes, depending on the size of the spears. The stems should be firm and the tips golden and crunchy. Delicious served with buttery new potatoes.
I sometimes place slices of Mozzarella under the spears as pillows. Children love the stringy Mozzarella and its mild flavour.
